Roll up for a delicious meal at The Gibson, the latest dining hotspot in town that promises tasty gastropub treats and barefoot bowling fun.
This family-friendly venue, formerly the Stafford Bowls Club, has been transformed by the Brisbane Racing Club and officially opened its doors in late June.
Venue manager Andrew Potter described The Gibson as a blend of the venue’s original charm with a modern dining experience.
“The venue was taken back to its bare bones but was always intended to be in keeping with the original design,” Andrew said.
“There are glass walls on either side of the venue, so patrons can look out at the green space on both sides. The main entrance has a grassed area for children to play on, plus a barefoot bowls green.”
Dining and Entertainment at The Gibson
The spacious indoor area can accommodate up to 110 diners, with an additional 110 seats available in an outdoor seating area that looks out onto Gibson Park. The sports bar, which seats 60, provides a relaxed dining option for guests.
Led by head chef Matt Bowden, the culinary team at The Gibson offers a menu of fresh, locally sourced dishes that showcase the best of gastro-pub cuisine.
With main meals that include crispy skinned pork belly, slow braised lamb shanks, vegan Mexican sweet potato, and gluten-free options such as crispy skinned salmon and lemon and thyme chicken, The Gibson offers something for every palate.
Club classics like chicken schnitzel and chicken parmigiana are also available, along with a variety of burgers, pizza, salads, pasta and steaks, including the Gibson signature steak, a slow-cooked eye fillet served on a potato rosti.
For those looking to share, The Gibson offers a selection of tasty share plates, including antipasto, baba ghanoush, chicken wings and Peruvian marinated chicken skewers.
Kids are also well-catered for, with a range of meal options from pizza to gluten-free gnocchi.
In addition to the delectable food and drinks, The Gibson offers a range of entertainment options, including Tuesday trivia nights, member draws, birthday draws and a Members Rewards loyalty program. Membership is only $1, so you can start enjoying the benefits right away.
The Gibson is open 7 days a week from 10am to midnight, serving lunch from 11.30am and dinner from 5.30pm. All-day dining is available on Saturdays and Sundays.
