Weet-Bix, Date and Ginger Loaf

Ingredients  

  • ¼ cup of dates chopped 
  • 1 cup of water 
  • 3 tablespoons of margarine (60g) 
  • ½ cup of sugar 
  • ¼ cup of glace ginger finely chopped 
  • 1 egg, lightly beaten 
  • 1 cup of self raising flour 
  • ½ teaspoon of bicarb soda 
  • 4 Weet-bix finely crushed 

Method 

  1. Place the dates, water, margarine and sugar into a saucepan and bring to the boil then simmer for two minutes. 
  2. Add ginger and let it cool. 
  3. Stir in the egg, flour, bicarbonate of soda and Weet-bix. 
  4. Spoon the mixture into a well greased and lined loaf tin. 
  5. Bake in a preheated oven at 180 degrees for 50 minutes. 
  6. When a skewer is inserted and comes out clean the loaf is ready. 
  7. Turn out onto a wire rack and cool before slicing. 
  8. Add butter if desired or delicious on its own.
