Ingredients
- ¼ cup of dates chopped
- 1 cup of water
- 3 tablespoons of margarine (60g)
- ½ cup of sugar
- ¼ cup of glace ginger finely chopped
- 1 egg, lightly beaten
- 1 cup of self raising flour
- ½ teaspoon of bicarb soda
- 4 Weet-bix finely crushed
Method
- Place the dates, water, margarine and sugar into a saucepan and bring to the boil then simmer for two minutes.
- Add ginger and let it cool.
- Stir in the egg, flour, bicarbonate of soda and Weet-bix.
- Spoon the mixture into a well greased and lined loaf tin.
- Bake in a preheated oven at 180 degrees for 50 minutes.
- When a skewer is inserted and comes out clean the loaf is ready.
- Turn out onto a wire rack and cool before slicing.
- Add butter if desired or delicious on its own.
