This month’s recipe has been provided by Leonie Johnson, member of the Kedron-Wavell Women’s Auxiliary. “This tastes just terrific!” Leonie says.
Ingredient
- 500 grams of pasta or macaroni
- 1kg of mince
- Garlic to taste (finely chopped)
- 2 onions (finely chopped)
- 2 tablespoons of tomato paste
- 1 can of crushed tomatoes
- 1 carton of cottage cheese
- 1 carton of sour cream
- 1 pinch of paprika
Method
- Cook the pasta as directed, then drain and set aside.
- Heat some oil in a pan and add the mince, onion and garlic. Cook until the meat is browned.
- Stir in the tomato paste and the can of crushed tomatoes. Cover and simmer for 20 minutes.
- Mix together the cottage cheese and sour cream.
- Grease a large casserole dish.
- Spread the pasta over the base, then layer the mince mixture. Finally top with the cottage cheese and sour cream mixture. Sprinkle with the paprika.
- Bake for one hour at 175 degrees celsius.
- Serve hot with a nice tossed salad.
