Chocolate Fudge Pudding

As we celebrate the mothers, grandmothers and mother figures in our lives this month, this recipe from Leonie Johnston is the perfect dessert to make mum’s day! Delicious served on its own or with cream or ice-cream. Happy Mother’s Day from all at Kedron-Wavell Women’s Auxiliary. 

Ingredients

  • 1 cup self-raising flour 
  • 1/2 cup sugar 
  • 1/2 teaspoon salt 
  • 2 tablespoons cocoa 
  • 1 teaspoon vanilla 
  • 1/2 cup milk 
  • 2 tablespoons melted margarine 

Topping: 

  • 1/2 cup brown sugar 
  • 1/4 cup cocoa 
  • 1 and 3/4 cups hot water

Method

  1. Mix together the flour, sugar, salt and cocoa. 
  2. Add milk, vanilla and melted margarine. Mix well. 
  3. Pour into an ovenproof dish. 
  4. For the topping, mix brown sugar and cocoa. Sprinkle over the mixture. 
  5. Pour hot water carefully over the back of a large spoon to cover the mixture. 
  6. Bake in a moderate oven for 50 minutes.
